Ingredients

Soya chunks1½ cups, dry
Cooking oil (vegetable oil)2 tbsp
Cumin seeds½ tsp
Bay leaf (indian bay leaf)1
Whole spicescinnamon, cloves, cardamom
Onion1 large, finely chopped
Ginger garlic paste1 tbsp
Green chilli1, slit
Tomato2 medium, pureed
Turmeric (ground turmeric)½ tsp
Kashmiri chilli powder1½ tsp
Coriander powder (ground coriander)2 tsp
Curd (plain yogurt, natural yoghurt)¼ cup, whisked
Garam masala1 tsp
Kasuri methi (dried fenugreek leaves)1 tsp
Saltto taste
Water2 cups
Coriander leaves (cilantro)a handful

Method

6 steps
  1. 1Boil the soya chunks in plenty of salted water for 5 minutes. Drain, rinse in cold water and squeeze each handful hard.
  2. 2Heat oil, add cumin, bay leaf and whole spices, then onion. Cook until deep golden.
  3. 3Add ginger garlic paste and green chilli, then tomato puree and the spice powders. Cook down.
  4. 4Lower the heat and stir in the whisked curd a spoon at a time.
  5. 5Add the soya chunks and toss to coat. Pour in water and simmer, covered.
  6. 6Finish with garam masala, crushed kasuri methi and coriander.
Serve it like this

Serve hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
