Ingredients

4 servings
Fishcatfish fillets, or basa or any firm white fish
Buttermilk¾ cup
Maize flour (fine yellow cornmeal)1 cup cornmeal
Maida (all-purpose flour, plain flour)¼ cup
Paprika1 tsp
Red chilli powder (indian red chili powder)½ tsp cayenne
Salt1½ tsp
Black pepper1 tsp
Cooking oil (vegetable oil)for frying
Lemon1, in wedges
Red chilli saucehot sauce, to serve

Method

5 steps
  1. 1Cut fillets into large pieces and soak in buttermilk with a little salt for 15 minutes.
  2. 2Mix cornmeal, flour, paprika, cayenne, salt and pepper.
  3. 3Lift out the fish, let excess drip off and press into the cornmeal on all sides.
  4. 4Fry in 2 cm of oil at about 180°C for 3 to 4 minutes a side until deep golden and flaky.
  5. 5Drain on a rack and serve hot with lemon and hot sauce.
Serve it like this

Pile on a platter lined with paper, lemon wedges tucked in and hot sauce on the side. Coleslaw and hush puppies complete the fish fry.
