Ingredients

4 servings
Sweet corn kernels (corn kernels)2 cups, cut from 3 cobs
Cooked fava beans (fava beans)lima or butter beans, cooked, or broad beans
Butter2 tbsp
Onion1 small, chopped
Red bell pepper (red capsicum, red pepper)½, diced
Okra (lady's finger)8 pods, sliced, optional
Tomato1, diced
Garlic2 cloves
Saltto taste
Black peppera pinch
Flat leaf parsleya little, chopped

Method

3 steps
  1. 1Melt butter and cook the onion, pepper and okra until softened.
  2. 2Add garlic, corn and beans and cook, stirring, 5 minutes.
  3. 3Add tomato and a splash of water, simmer 5 minutes and season. Finish with parsley.
Serve it like this

Serve warm in a shallow bowl with extra black pepper. A bright side for fried chicken, catfish or grilled meats.
