Smoked salmon blinis.

Ingredients

6 servings
Buckwheat flour½ cup (kuttu atta)
Maida (all-purpose flour, plain flour)½ cup
Instant dry yeast1 tsp
Sugar1 tsp
Salta pinch
Milk⅔ cup, warm
Egg1, separated
Butter1½ tbsp, melted, plus for the pan
Sour cream½ cup
Smoked salmon150 g, in ribbons
Dill leavesa few sprigs
Lemon½, zest and wedges

Method

4 steps
  1. 1Whisk flours, yeast, sugar, salt, warm milk, egg yolk and melted butter. Rest 40 minutes.
  2. 2Whisk the egg white to soft peaks and fold in.
  3. 3Drop teaspoons onto a lightly buttered pan on medium heat. Flip when bubbles pop on top.
  4. 4Cool the blinis. Top each with sour cream, a ribbon of salmon, dill and lemon zest.
Serve it like this

Line blinis on a slate or platter, each topped with cream, salmon and dill, lemon wedges at one end. Serve cool.
