Ingredients

4 servings
Minced pork (pork mince, ground pork)250 g
Prawns (shrimp)150 g, roughly chopped
Dried shiitake mushrooms3, soaked and finely chopped
Cornflour (cornstarch)1 tbsp
Soy sauce2 tsp
Oyster sauce2 tsp
Sugar1 tsp
Sesame oil1 tsp
White pepper¼ tsp
Salta pinch
Wonton wrappers20 wrappers, corners trimmed round
Carrota little, very finely diced

Method

4 steps
  1. 1Mix the pork with soy, oyster sauce, sugar, sesame oil, pepper, salt and cornflour. Stir one way, then slap it into the bowl until sticky.
  2. 2Fold in the prawns and mushrooms.
  3. 3Make a circle with thumb and finger, set a wrapper over it, add a spoon of filling and squeeze into an open cup. Flatten the top with a wet spoon.
  4. 4Dot with carrot and steam on lined baskets over high heat for 8 to 10 minutes.
Serve it like this

Line up in a bamboo steamer with the orange dots on top, soy sauce and chilli oil on the side, hot tea in small cups.
