Ingredients

4 servings
Maize flour (fine yellow cornmeal)1 cup coarse cornmeal or grits
Water2½ cups
Milk1¼ cups
Butter2 tbsp
Cheddar cheese½ cup, grated
Bacon (streaky rashers, streaky bacon)3 rashers, chopped
Prawns (shrimp)400 g, peeled and deveined
Garlic4 cloves
Kashmiri chilli powder1 tsp, as paprika
Red chilli powder (indian red chili powder)a pinch, as cayenne
Lemon juice2 tsp
Spring onion (green onion, scallion)2, sliced
Saltto taste

Method

5 steps
  1. 1Bring water, milk and a pinch of salt to a simmer. Whisk in grits slowly.
  2. 2Cook on low, stirring often, 20 to 25 minutes until creamy. Stir in butter and cheese.
  3. 3Fry bacon until crisp; remove. In the drippings, cook garlic for 30 seconds.
  4. 4Add prawns, paprika and cayenne. Cook 2 minutes a side, finish with lemon and bacon.
  5. 5Spoon grits into bowls and top with prawns and spring onion.
Serve it like this

Spoon grits into a wide shallow bowl, pile prawns in the centre with their pan juices and finish with spring onion and lemon.
