Ingredients

4 servings
Wheat noodles250 g dry noodles
Chinese sesame paste3 tbsp, or tahini
Soy sauce2 tbsp
Chinkiang black vinegar1 tbsp, or rice vinegar
Sugar2 tsp
Sesame oil2 tsp
Chinese chilli oil2 tsp, to taste
Garlic2 cloves, grated
Ginger1 tsp, grated
Water3 tbsp, warm
Cucumber1, in matchsticks
Carrot1, in matchsticks
Spring onion (green onion, scallion)2, sliced
Sesame seeds1 tbsp, toasted

Method

3 steps
  1. 1Cook noodles to just tender, rinse under cold water and toss with sesame oil.
  2. 2Whisk sesame paste with soy, vinegar, sugar, garlic, ginger and warm water until smooth.
  3. 3Toss noodles with the sauce and chilli oil, then top with cucumber, carrot, spring onion and sesame.
Serve it like this

Twirl into bowls, pile vegetables and sesame on top, extra chilli oil on the side. Serve cold or room temperature.
