Ingredients

4 servings
Potatoboiled and mashed
Oniondivided, half fried, half raw
Curry powder2 tsp
Salt1 tsp
Spring roll sheetsthin spring roll wrappers
Cooking oil (vegetable oil)for frying, about 60 g absorbed
Chana dal (split chickpeas)split chickpeas
Waterfor the soup
Turmeric (ground turmeric)½ tsp
Cabbagefinely shredded
Mint leavesa handful
Coriander leaves (cilantro)a handful
Green chilli2, sliced
Tamarindpulp, in 1/4 cup water
Kashmiri chilli powder2 tsp
Lemonlime wedges

Method

5 steps
  1. 1Mix the mashed potato with half the onion, fried, the curry powder and some salt.
  2. 2Cut the wrappers into strips, fold triangle samosas around spoonfuls of filling and seal with water.
  3. 3Fry in hot oil until golden and crisp.
  4. 4Simmer the chana dal with turmeric and water until soft and soupy, about 35 minutes. Season with salt.
  5. 5Chop the samosas into a bowl, add the cabbage, raw onion, mint, coriander and chilli. Pour over hot soup, tamarind water and chilli powder, with lime.
Serve it like this

Serve in a deep bowl with the soup poured over at the table, lime and extra chilli on the side.
