Ingredients

6 servings
Cherries2 cups, pitted
Raspberries1½ cups
Strawberries1½ cups, halved
Blueberries¾ cup
Sugar⅓ cup plus 1 tbsp
Water1 cup or red berry juice
Cornflour (cornstarch)3 tbsp
Lemon juice2 tsp
Milkfor vanilla sauce
Custard powder2 tbsp, for vanilla sauce

Method

4 steps
  1. 1Simmer cherries with most of the water and sugar for 5 minutes.
  2. 2Mix cornflour with the remaining water, stir in and bring back to a boil until it thickens.
  3. 3Off heat, fold in the softer berries and lemon juice. Chill until set.
  4. 4Make a thin vanilla custard with milk, a little sugar and custard powder, and chill.
Serve it like this

Spoon into glass bowls so the red shows, pour cold vanilla sauce over one side and serve chilled.
