1Heat the oven to 220°C. Trim the cauliflower leaves, keep the core, and cut each head through the core into two 2.5 cm thick slabs. Save the loose florets.
2Brush the steaks and florets with a tablespoon of oil, paprika, cumin and salt. Roast on a tray, flipping once.
3For the chimichurri, stir parsley, coriander, garlic, oregano, vinegar, chilli flakes, salt and the remaining oil.
4Mash the warm chickpeas with lemon juice, a splash of water, salt and a few roasted florets.
5Spread the mash on plates, top with a cauliflower steak and spoon the chimichurri over generously.
Serve it like this
Swoosh warm chickpea mash on a plate, set the steak on top, spoon chimichurri over and finish with lemon and flaky salt.
