Ingredients

4 servings
Beefbrisket or shin, in one piece
Water2 litres
Keluak nut pasteflesh of 4 to 5 keluak nuts, or ready paste
Shallots8
Garlic8 cloves
Candlenuts4, or macadamias
Turmeric (ground turmeric)1 tsp
Gingera thumb
Coriander seeds1½ tsp
Galangala thumb, bruised
Lemongrass2 stalks, bruised
Kaffir lime leaves (makrut lime leaves)5
Bay leaf (indian bay leaf)2 salam or bay leaves
Cooking oil (vegetable oil)1½ tbsp
Palm sugar (gula melaka)2 tsp
Salt1½ tsp
Moong sprouts (mung bean sprouts)short bean sprouts
Cooked rice4 bowls
Eggsalted eggs or boiled eggs

Method

5 steps
  1. 1Boil the beef 5 minutes, drain and rinse. Simmer in the water for 90 minutes until tender.
  2. 2Blend the keluak, shallots, garlic, candlenuts, turmeric, ginger and coriander to a paste.
  3. 3Fry the paste in the oil with the galangal, lemongrass, lime leaves and salam for 8 minutes.
  4. 4Cube the beef and return it with the paste to the broth. Simmer 30 minutes; season with palm sugar and salt.
  5. 5Serve with rice, raw sprouts, salted egg and sambal.
Serve it like this

Serve in a deep bowl with sprouts piled on top, rice on the side, half a salted egg and a dab of sambal. Prawn crackers for crunch.
