Ingredients

10 servings
Fresh red chillies (fresh red chiles)15 red chillies
Green chilli5 bird's eye chillies
Shallots6
Garlic4 cloves
Tomato1
Shrimp paste2 tsp terasi
Jaggery1 tbsp palm sugar
Salt1 tsp
Cooking oil (vegetable oil)3 tbsp
Lemon juice1 tbsp lime juice

Method

3 steps
  1. 1Fry chillies, shallots, garlic and tomato in oil until soft and blistered. Toast terasi in a dry pan.
  2. 2Pound everything with jaggery and salt in a mortar (ulekan) or pulse coarsely.
  3. 3Return to the pan and fry 2 minutes. Stir in lime off the heat.
Serve it like this

Serve a spoonful in a small dish or on the side of the plate with fried chicken, rice, fish or fried tofu.
