Ingredients

8 servings
Rice flour2 cups, sticky rice flour if possible
Jaggery¾ cup, grated
Water⅔ cup, warm
Cooking oil (vegetable oil)for frying, about this much is absorbed

Method

3 steps
  1. 1Dissolve jaggery in warm water and strain.
  2. 2Mix into the rice flour to make a thick, sticky dough. Rest 30 minutes.
  3. 3Shape small flat discs and fry in hot oil until puffed and brown.
Serve it like this

Serve warm in a basket with red tea, a few per person.
