Ingredients

4 servings
Maida (all-purpose flour, plain flour)2 cups
Waterabout 1/2 cup
Saltto taste, divided
Minced pork (pork mince, ground pork)400 g, with some fat
Onion1, finely chopped
Garlic6 cloves, divided
Ginger2.5 cm, grated
Spring onion (green onion, scallion)3 stalks, chopped
Soy sauce2 tsp
Black pepper½ tsp
Cooking oil (vegetable oil)2 tsp
Tomato2, for the chutney
Dried red chilli4, soaked

Method

5 steps
  1. 1Knead maida, water and a pinch of salt into a smooth, firm dough. Rest 30 minutes.
  2. 2Mix pork, onion, half the garlic, ginger, spring onion, soy, pepper, oil and salt with a splash of water.
  3. 3Roll small thin rounds, fill and pleat shut.
  4. 4Steam on an oiled steamer for 12 to 14 minutes, until the pork is cooked through.
  5. 5Blanch tomatoes and grind with soaked chillies, remaining garlic and salt for the chutney.
Serve it like this

Serve hot in the steamer basket with red chutney and a bowl of clear soup on the side.
