Pollo al ajillo.

Ingredients

4 servings
Chicken, curry cut (bone in chicken, small pieces)1 kg, small pieces on the bone
Garlic1 head, cloves lightly crushed
Olive oil4 tbsp
Dry white wine150 ml dry white wine or fino
Bay leaf (indian bay leaf)2
Dried mixed herbs (italian seasoning)½ tsp thyme
Flat leaf parsleychopped
Dried red chilli1, optional
Saltto taste

Method

4 steps
  1. 1Season the chicken and brown slowly in olive oil until golden all over.
  2. 2Add the garlic, bay and chilli and cook until the garlic is golden.
  3. 3Pour in the wine, scrape the pan and simmer covered until the chicken is cooked through with no pink at the bone.
  4. 4Uncover, reduce until glossy and scatter parsley.
Serve it like this

Serve in a terracotta dish with the garlic cloves and sauce spooned over, bread or fried potatoes alongside.
