Ingredients

Almonds1 cup blanched
White bread2 slices stale bread, crusts off, soaked
Garlic1 to 2 cloves
Olive oil4 tbsp
Vinegar1½ tbsp sherry vinegar
Water2½ cups, iced
Saltto taste
Grapesgreen grapes, halved, to serve

Method

4 steps
  1. 1Blend almonds, soaked bread, garlic and salt with a little water to a very smooth paste.
  2. 2Drizzle in the olive oil with the blender running, then the vinegar.
  3. 3Blend in the iced water, strain if you like, and chill well.
  4. 4Serve topped with halved grapes and a few drops of oil.
Serve it like this

Serve very cold in small bowls with halved green grapes and a few drops of olive oil.
