Ingredients

8 servings
Cheddar cheese2½ cups, hand grated sharp cheddar
Mayonnaise½ cup
Red bell pepper (red capsicum, red pepper)1 jar pimientos or 1 roasted red pepper, diced
Cream cheese3 tbsp, soft
Onion1 tsp, finely grated
Red chilli sauce1 tsp hot sauce
Red chilli powder (indian red chili powder)a pinch of cayenne
Black pepper¼ tsp

Method

4 steps
  1. 1If using a fresh pepper, char it over a flame until black all over, rest it in a covered bowl, then peel and dice.
  2. 2Grate the cheddar by hand on the large holes of a box grater.
  3. 3Beat cream cheese, mayonnaise, onion, hot sauce, cayenne and pepper until smooth.
  4. 4Fold in cheddar and peppers, leaving some texture. Chill at least an hour before serving.
Serve it like this

Pile into a bowl with crackers and celery sticks, or spread thick between slices of white bread. Serve cool, not fridge cold.
