Ingredients

4 servings
Pork4 bone in pork chops, 2 cm thick
Maida (all-purpose flour, plain flour)½ cup
Paprika1 tsp
Garlic3 cloves, minced
Onion2 large, sliced
Chicken stock (chicken broth)1⅔ cups
Milk½ cup
Dried thyme½ tsp
Saltto taste
Black pepper1 tsp
Cooking oil (vegetable oil)2 tbsp

Method

  1. 1Season the chops with salt, pepper and paprika and dust with flour, keeping the leftover flour.
  2. 2Brown the chops in hot oil 3 minutes a side and set aside.
  3. 3Cook the onions in the same pan until soft and golden, then garlic and 2 tbsp of the leftover flour.
  4. 4Whisk in stock and milk, add thyme and bring to a simmer.
  5. 5Return the chops, cover and simmer gently 25 to 30 minutes until tender, turning once.
Serve it like this

Lay a chop over a mound of white rice and spoon plenty of onion gravy over both. Collards or green beans on the side.
