Ingredients

6 servings
Chicken, curry cut (bone in chicken, small pieces)1 whole chicken, cut into pieces
Onion1 large, chopped
Carrot2, sliced
Celery2 stalks, sliced
Garlic3 cloves
Bay leaf (indian bay leaf)1
Dried thyme½ tsp
Water8 cups
Saltto taste
Black pepper1 tsp
Maida (all-purpose flour, plain flour)2 cups, for dumplings
Baking powder2 tsp
Butter5 tbsp, divided
Milk¾ cup
Flat leaf parsleya handful

Method

6 steps
  1. 1Simmer the chicken with onion, carrot, celery, garlic, bay, thyme, salt and water for 45 minutes.
  2. 2Lift out the chicken, shred the meat and discard bones and skin.
  3. 3For the dumplings, rub 45 g butter into flour, baking powder and a pinch of salt, then stir in milk to a soft dough.
  4. 4Roll 3 mm thick on a floured board and cut into 3 cm strips.
  5. 5Bring the broth to a simmer, drop in the strips one by one, cover and cook 15 minutes without lifting the lid.
  6. 6Stir in chicken and remaining butter, season and scatter parsley.
Serve it like this

Ladle into deep bowls with plenty of broth and dumplings, black pepper and parsley on top. Serve with green beans or a simple salad.
