Ingredients

4 servings
Basil leaves2 cups leaves
Cashews2 tbsp (or pine nuts)
Garlic1 clove
Parmesan3 tbsp, grated
Olive oil3 tbsp
Lemona squeeze
Salt½ tsp
Paneer200 g, sliced
Black peppera pinch
Tomato1, sliced
Whole wheat bread (wholemeal bread)8 slices multigrain or whole wheat
Butter1½ tbsp

Method

4 steps
  1. 1Blend basil, cashews, garlic, parmesan, 2 1/2 tbsp oil, lemon and salt into a coarse pesto.
  2. 2Brush paneer slices with the remaining oil and pepper and grill 2 minutes a side.
  3. 3Spread pesto on the bread, layer paneer and tomato, close and butter the outside.
  4. 4Toast in a sandwich press or pan until golden.
Serve it like this

Slice diagonally and serve with salad leaves and potato wedges or chips. Warm.
