Pan seared steak.

Ingredients

2 servings
Beef2 ribeye or sirloin steaks, about 2.5 cm thick
Salt1 tsp, flaky if possible
Black pepper1 tsp, coarse
Cooking oil (vegetable oil)2 tsp
Butter2 tbsp
Garlic4 cloves, crushed
Rosemary2 sprigs, or thyme

Method

4 steps
  1. 1Pat steaks dry and salt generously. Leave at room temperature 30 minutes, or salt and chill uncovered overnight.
  2. 2Heat a heavy pan until smoking, add oil and lay in the steaks. Do not move for 2 to 3 minutes.
  3. 3Flip, add butter, garlic and herbs. Tilt the pan and spoon foaming butter over the steaks for 2 to 3 minutes.
  4. 4Rest on a board 5 to 8 minutes. Slice against the grain and pepper.
Serve it like this

Slice and fan on a warm board, spoon over the garlic butter and serve with mashed potatoes or fries and a green salad.
