Ingredients

4 servings
Maida (all-purpose flour, plain flour)1⅔ cups
Cocoa powder (unsweetened cocoa powder)¼ cup
Sugar⅓ cup
Baking powder2 tsp
Baking soda (bicarb soda, bicarbonate of soda)¼ tsp
Salta pinch
Milk1⅔ cups
Egg2
Butter5 tbsp, melted, plus a little for the iron
Vanilla essence (vanilla flavouring, imitation vanilla extract)½ tsp
Dark chocolate (bittersweet chocolate)60 g, finely chopped
Vanilla ice cream4 scoops, to serve

Method

5 steps
  1. 1Heat the waffle iron. Sift the maida, cocoa, sugar, baking powder, baking soda and salt into a bowl.
  2. 2Whisk the milk, eggs, melted butter and vanilla. Fold into the dry mix until just combined, then fold in the chopped chocolate.
  3. 3Brush the iron with butter. Pour in batter to cover two thirds of the grid, close and cook 4 to 5 minutes.
  4. 4Cool for a minute on a wire rack so the outside crisps.
  5. 5Serve warm with a scoop of vanilla ice cream on top.
Serve it like this

Lay a warm waffle on a plate, set a scoop of ice cream in the centre and scatter a few chocolate shavings over the top.
