Ingredients

4 servings
Toor dal (split pigeon peas)¾ cup
Water3½ cups
Turmeric (ground turmeric)½ tsp
Spinach1 bunch, chopped
Ghee4 tsp
Cumin seeds1 tsp
Dried red chilli1
Asafoetidaa pinch
Garlic4 cloves, chopped
Ginger2.5 cm, chopped
Green chilli1, chopped
Onion1 small, chopped
Tomato1 medium, chopped
Red chilli powder (indian red chili powder)½ tsp
Saltto taste
Lemon juice2 tsp

Method

6 steps
  1. 1Pressure cook the toor dal with water and turmeric for 4 whistles. Let the pressure release naturally, then whisk smooth.
  2. 2Heat ghee, add cumin, dried red chilli and asafoetida, then garlic.
  3. 3Add ginger, green chilli and onion. Cook until soft, then add tomato and chilli powder and cook until mushy.
  4. 4Add the spinach and cook just until wilted.
  5. 5Pour in the dal and salt, add water if thick, and simmer 5 minutes.
  6. 6Switch off and stir in lemon juice. Serve with rice or roti.
Serve it like this

Serve hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
