Ingredients

Sweet potato glass noodles (glass noodles, cellophane noodles)2 bundles, soaked
Prawns (shrimp)peeled
Egg2
Cabbage1½ cups, shredded
Carrot1 small, julienned
Onion1 small, sliced
Tomato1, in wedges
Spring onion (green onion, scallion)2, in lengths
Garlic4 cloves
Oyster sauce1 tbsp
Soy sauce2 tsp
Fish sauce2 tsp
Jaggerya pinch
White peppera pinch
Cooking oil (vegetable oil)2 tbsp

Method

4 steps
  1. 1Soak glass noodles in warm water until soft, drain and cut into shorter lengths with scissors.
  2. 2Fry garlic in oil, add prawns and cook until pink. Push aside and scramble the eggs.
  3. 3Add onion, carrot, cabbage and tomato and toss over high heat for 2 minutes.
  4. 4Add the noodles, sauces, sugar, pepper and a splash of water. Toss until absorbed, then add spring onion.
Serve it like this

Twirl onto a plate with prawns on top and a few spring onion lengths. Serve with chilli fish sauce on the side.
