Ingredients

Chicken, curry cut (bone in chicken, small pieces)bone in pieces
Thin coconut milk2 cups
Thick coconut milk¾ cup
Shallots6
Garlic6 cloves
Cashews5 candlenuts, or cashews
Coriander seeds1½ tsp
Cumin seeds¼ tsp
White pepper¼ tsp
Ginger2.5 cm
Galangal2.5 cm, bruised
Turmeric (ground turmeric)a pinch
Lemongrass2 stalks, bruised
Kaffir lime leaves (makrut lime leaves)4
Bay leaf (indian bay leaf)2 bay leaves
Jaggery2 tsp
Saltto taste
Cooking oil (vegetable oil)1 tbsp

Method

4 steps
  1. 1Grind shallots, garlic, candlenuts, toasted coriander and cumin, white pepper, ginger and turmeric into a paste.
  2. 2Fry paste with lemongrass, galangal, lime and bay leaves until fragrant.
  3. 3Add chicken and stir to coat, then pour in thin coconut milk. Simmer gently until the chicken is cooked through and tender.
  4. 4Add thick coconut milk, jaggery and salt. Simmer, stirring, until slightly thickened.
Serve it like this

Serve in a deep bowl with fried shallots on top, alongside rice cakes or rice, sambal and a vegetable side.
