Ingredients

4 servings
Rice1½ cups, washed
Thin coconut milk1¾ cups
Pandan leaves2 leaves, knotted
Lemongrass1 stalk, bruised
Bay leaf (indian bay leaf)1
Kaffir lime leaves (makrut lime leaves)2
Salt¾ tsp
Shallots3, sliced
Cooking oil (vegetable oil)1 tbsp

Method

4 steps
  1. 1Simmer coconut milk with pandan, lemongrass, bay and lime leaves and salt for 3 minutes.
  2. 2Add rice and cook on low, covered, until liquid is absorbed.
  3. 3Rest 10 minutes off heat, covered, then fluff.
  4. 4Fry shallots in oil until crisp and scatter on top.
Serve it like this

Press into a bowl and turn out onto a banana leaf, top with fried shallots, and surround with fried chicken, tempe orek, egg and sambal.
