Ingredients

4 servings
Dried white peas1 cup, soaked overnight
Baking soda (bicarb soda, bicarbonate of soda)a pinch
Water3 cups
Cooking oil (vegetable oil)1 tbsp
Onion1 medium, sliced
Garlic4 cloves, chopped
Ginger2.5 cm, chopped
Green chilli2, slit
Spring onion (green onion, scallion)4 stalks, chopped

Method

4 steps
  1. 1Pressure cook the soaked peas with water and a pinch of soda for 4 whistles. Let the pressure release naturally.
  2. 2Heat oil, fry onion, garlic, ginger and chillies until soft.
  3. 3Add the peas and salt and simmer, mashing some of the peas.
  4. 4Stir in the spring onions and cook 2 minutes more.
Serve it like this

Serve hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
