Dried red chilli6 to 8, or to taste
Spring onion (green onion, scallion)2 stalks, chopped
Coriander leaves (cilantro)a small handful, chopped

Water2 cups, for boilingMethod
- 1Boil the potato and beans in salted water until very soft. Keep a little of the water.
- 2Roast the ngari on a dry pan, or wrapped in a banana leaf over a flame, until hot all through.
- 3Roast the dried chillies on the same pan until they darken slightly.
- 4Pound the chillies, ngari and salt into a rough paste. Add the vegetables and mash together with a splash of the cooking water.
- 5Mix in the spring onion and coriander and serve with rice.
