Ingredients

4 servings
Besan (chickpea flour, gram flour)toasted
Cooking oil (vegetable oil)3 tbsp
Shallotssliced, fried crisp
Onion1 large, chopped
Garlic5 cloves
Gingera thumb
Turmeric (ground turmeric)1 tsp
Paprika1 tsp
Chicken, bonelessthigh, diced
Fish sauce2 tbsp
Water1¼ cups
Rice noodlesthick round rice noodles
Egg4, boiled
Lemonlime wedges
Coriander leaves (cilantro)chopped
Dried red chilliflakes, fried in oil

Method

5 steps
  1. 1Toast the besan in a dry pan until golden and nutty.
  2. 2Fry the shallots in the oil until crisp; lift out and keep the oil.
  3. 3In some of the oil fry the onion, garlic and ginger until golden, then the turmeric, paprika and chicken until no pink remains.
  4. 4Add the fish sauce, water and 1 tbsp of the toasted besan and simmer 15 minutes until thick.
  5. 5Cook the noodles. Toss by hand with the curry, the rest of the besan, shallot oil, crisp shallots and lime. Top with egg, coriander and chilli oil.
Serve it like this

Serve in a bowl with the egg halved on top, lime and chilli oil on the side, and a small bowl of clear broth.
