Mushroom methi risotto with garam masala butter

Vegetable stock (vegetable broth)4 cups, hot
Button mushroom300 g, sliced
Olive oil1 tbsp
Butter3½ tbsp, divided
Onion1 small, finely chopped
Garlic3 cloves, minced
Arborio rice1½ cups
Fenugreek leaves1 bunch, leaves chopped

Fresh cream (thickened cream, heavy cream)3 tbsp
Parmesan½ cup, grated
Black pepper¼ tsp
Garam masala½ tsp
Kasuri methi (dried fenugreek leaves)2 tsp, crushedMethod
- 1Keep the stock hot on low heat. Sear the mushrooms in the olive oil in a wide pan on high heat for 5 minutes. Salt lightly and set aside.
- 2In the same pan on medium heat, melt 20 g butter. Cook onion and garlic for 5 minutes, then toast the rice for 2 minutes.
- 3Add the stock a ladle at a time on medium heat, stirring often, for 17 minutes. Add the fresh methi for the last 5 minutes.
- 4Off the heat, stir in mushrooms, cream, parmesan and pepper. Beat 30 seconds, cover and rest 2 minutes.
- 5Melt the remaining 30 g butter in a small pan on low heat until it foams and smells nutty. Add garam masala and kasuri methi for 20 seconds.
Serve it like thisSpread on a warm flat plate, arrange the seared mushrooms on top in a loose line and drizzle the garam masala butter around in a ring.
