Ingredients

Ripe mango3 Alphonso, 400 g pulped, 150 g diced
Hung curd (greek yogurt)¾ cup
Condensed milk (sweetened condensed milk)½ cup
Cardamom¼ tsp
Lemon juice2 tsp
Fresh cream (thickened cream, heavy cream)1¼ cups, cold
Pistachios¼ cup, chopped
Saffrona pinch
Mint leavesa few sprigs

Method

5 steps
  1. 1Blend 400 g mango with the hung curd, condensed milk, cardamom and lemon juice until smooth.
  2. 2Whip the cream to soft peaks. Fold into the mango in three batches.
  3. 3Line a 900 g loaf tin with cling film. Pour in half, scatter half the pistachios, then add the rest.
  4. 4Cover and freeze at least 6 hours.
  5. 5Turn out, rest 5 minutes and slice with a hot knife. Top with diced mango, saffron, remaining pistachios and mint.
Serve it like this

Lay a slice flat on a chilled plate. Pile diced mango at one end, add a mint sprig and dot mango purée down the plate.
