Classic moi moi.

Ingredients

6 servings
Lobia, dry (dried black eyed peas)1½ cups, soaked 2 hours and skinned
Red bell pepper (red capsicum, red pepper)1½, chopped
Onion1 medium
Scotch bonnet chilli (habanero or scotch bonnet pepper, habanero chilli)1
Cooking oil (vegetable oil)4 tbsp (or palm oil)
Stock cube (bouillon cube)1 cube
Ground dried crayfish (ground dried shrimp)1 tbsp
Egg3, boiled and sliced
Waterabout 1 1/4 cups
Saltto taste

Method

4 steps
  1. 1Rub the soaked beans between your palms in water and float off the skins.
  2. 2Blend beans with peppers, onion, scotch bonnet and just enough water until very smooth.
  3. 3Stir in oil, crushed cube, crayfish and salt. Beat for a minute.
  4. 4Pour into greased bowls or foil cups, add a slice of egg to each, cover and steam.
Serve it like this

Turn out of the bowl onto a plate, slice to show the egg, and serve beside jollof rice or with custard or pap for breakfast.
