Lobia, dry (dried black eyed peas)2½ cups black eyed peas or honey beans
Ripe plantain (ripe nendran banana)2 ripe plantains, cubed
Red palm oil⅓ cup
Onion1 large, chopped
Red bell pepper (red capsicum, red pepper)1, blended
Scotch bonnet chilli (habanero or scotch bonnet pepper, habanero chilli)1, blended
Ground dried crayfish (ground dried shrimp)1½ tbsp
Stock cube (bouillon cube)1 cube

- 1Boil the beans in water, discard the first water after 10 minutes, then cook in fresh water until soft.
- 2Add onion, blended peppers, palm oil, crayfish and stock cube and simmer.
- 3Add plantain and cook until soft, mashing some beans to thicken.
Serve it like thisServe in deep bowls with extra fried plantain on top, or with bread or garri on the side.
