Rice2½ cups long grain parboiled rice, washed
Red bell pepper (red capsicum, red pepper)2 large, roughly chopped
Tomato4 large, chopped
Scotch bonnet chilli (habanero or scotch bonnet pepper, habanero chilli)1 to 2, or 3 green chillies
Onion2 large: one for the blend, one sliced
Tomato puree¼ cup tomato paste
Cooking oil (vegetable oil)⅓ cup
Curry powder2 tsp
Dried thyme1 tsp
Bay leaf (indian bay leaf)3 leaves
Stock cube (bouillon cube)2 stock cubes
Water3 cups stock or water
Butter1½ tbsp

- 1Blend the peppers, tomatoes, scotch bonnet and one onion until smooth. Boil the blend in a pot until reduced by half.
- 2Heat oil and fry the sliced onion until soft, then add the tomato paste and fry.
- 3Add the reduced pepper base, curry powder, thyme, bay leaves and crumbled stock cubes. Fry until oil rises to the top.
- 4Stir in the washed rice and add stock just to cover. Cover with foil and a tight lid. Cook on low.
- 5Check a grain, add a splash of water if hard, stir gently and add butter. Let the base catch a little on low for 5 minutes.
Serve it like thisPile onto a plate with fried plantain, fried chicken and a spoon of coleslaw or moi moi on the side. Serve hot.
