Ingredients

4 servings
Mustard greensa bunch, chopped
Pumpkin1 cup cubes
Potato1 large, cubed
Brinjal (eggplant, aubergine)1 small, cubed
Green beans1 cup, cut
Bamboo shoot½ cup, sliced
Baking soda (bicarb soda, bicarbonate of soda)a pinch, or chingal
Green chilli2, slit
Saltto taste
Water3⅓ cups

Method

4 steps
  1. 1Bring water to a boil with the pinch of soda.
  2. 2Add potato, pumpkin, beans, brinjal and bamboo shoot and simmer until soft.
  3. 3Add the greens, chillies and salt and cook until wilted.
  4. 4Serve as a light, slightly thick stew with rice.
Serve it like this

Ladle into warm bowls and serve hot, with a few coriander leaves on top.
