Ingredients

4 servings
Rice1 cup, washed
Chicken, curry cut (bone in chicken, small pieces)400 g, small pieces
Ginger4 cm, crushed
Garlic4 cloves, crushed
Onion1 small, chopped
Black pepper¼ tsp
Saltto taste
Water5 cups
Spring onion (green onion, scallion)2 stalks, chopped

Method

4 steps
  1. 1Boil the chicken with water, ginger, garlic, onion and salt until tender.
  2. 2Lift out the chicken, pull the meat off the bones and return it to the pot.
  3. 3Add the rice and cook on low, stirring often, until the grains break down into a thick porridge.
  4. 4Finish with pepper and spring onion and serve hot.
Serve it like this

Fluff gently with a fork and serve hot on a wide plate, with raita or a side next to it.
