Ingredients

2 servings
Wheat noodles200 g egg noodles
Chicken, bonelesssliced
Egg2
Cabbageshredded
Bok choy (pak choi)1 head, or choy sum
Carrotjulienned
Shallots3
Garlic4 cloves
Kecap manis2 tbsp
Soy sauce2 tsp
Oyster sauce2 tsp
Red chilli sauce2 tsp sambal or chilli sauce
Cooking oil (vegetable oil)2 tbsp
Spring onion (green onion, scallion)1, sliced

Method

4 steps
  1. 1Boil noodles until just tender, drain and toss with a little oil.
  2. 2Fry shallots and garlic, add chicken and cook through with no pink.
  3. 3Push aside, scramble eggs, then add carrot, cabbage and greens.
  4. 4Add noodles and sauces and toss over high heat until glossy and a little sticky. Finish with spring onion.
Serve it like this

Twirl onto a plate, top with fried shallots and a fried egg if you like, with cucumber, tomato and sambal on the side.
