Ingredients

4 servings
Chicken, boneless2 large breasts, halved into cutlets
Maida (all-purpose flour, plain flour)2 tbsp
Olive oil1½ tbsp
Butter1 tbsp
Garlic4 cloves, minced
Sun dried tomatoes⅓ cup, chopped
Chicken stock (chicken broth)¾ cup
Fresh cream (thickened cream, heavy cream)¾ cup
Parmesan½ cup, grated
Dried oregano½ tsp
Red chilli powder (indian red chili powder)a pinch of chilli flakes
Basil leavesa handful
Saltto taste
Black peppera pinch

Method

5 steps
  1. 1Season the cutlets and dust with flour.
  2. 2Sear in oil and butter 4 to 5 minutes a side until golden and cooked through with no pink. Lift out.
  3. 3Fry garlic and sun dried tomatoes 1 minute, then add stock and scrape the pan.
  4. 4Add cream, parmesan, oregano and chilli and simmer until thick.
  5. 5Return the chicken and juices, spoon sauce over and finish with basil.
Serve it like this

Serve in the pan with sauce spooned over, basil on top, and pasta, mash or crusty bread alongside.
