Prawns (shrimp)400 g, peeled and deveined
Buttermilk½ cup
Kashmiri chilli powder1½ tsp
Turmeric (ground turmeric)¼ tsp
Black pepper½ tsp
Salt1 tsp, divided
Rice flour⅓ cup
Rava (semolina)¼ cup
Cooking oil (vegetable oil)about 1 cup for shallow frying (4 tbsp absorbed)
Curry leaves1 sprig
Mayonnaise⅓ cup
Lemon juice2 tsp
Garlic1 clove, grated
Baguette (french bread roll)2 baguettes, each cut in half
Lettucea few leaves, shredded
Tomato2, sliced
Dill pickles (gherkins)8 slices
Red chilli sauceto drizzleMethod
- 1Toss the prawns with the buttermilk, chilli, turmeric, pepper and 1/2 tsp salt. Rest 10 minutes.
- 2Heat 1 tbsp oil on medium heat and fry the curry leaves 15 seconds until crisp. Crumble into the mayonnaise with the lemon juice and garlic.
- 3Mix the rice flour, rava and remaining salt. Dredge the prawns, shaking off any excess.
- 4Heat the rest of the oil in a wide pan on medium high heat. Shallow fry the prawns in batches for 1 1/2 to 2 minutes a side.
- 5Warm the baguettes in the oven at 180°C for 4 minutes. Split and spread with curry leaf mayo.
- 6Layer lettuce, tomato, pickles and prawns. Drizzle with chilli sauce and close.
Serve it like thisServe the roll on paper on a board, prawns falling from the cut end, with a ramekin of curry leaf mayo and a lemon wedge.
