Ingredients

5 servings
Chicken, boneless500 g boneless chicken
Whole wheat flour (wholemeal atta flour, chapati flour)1 cup atta
Onion1 large, chopped
Tomato1 large, chopped
Garlic3 cloves
Baharat2½ tsp
Dried lime1 dried lime
Turmeric (ground turmeric)½ tsp
Whole spices3 cardamom
Ghee3 tbsp
Green chilli1
Saltto taste
Water5 cups

Method

4 steps
  1. 1Fry onion in half the ghee until golden, add garlic, chilli, tomato and spices.
  2. 2Add the chicken, loomi and water and simmer until the chicken is fully cooked. Shred it in the pot.
  3. 3Whisk the flour with a cup of cold water and stream it into the pot, whisking hard.
  4. 4Cook on low, beating with a wooden spoon often, until thick and silky. Finish with the rest of the ghee.
Serve it like this

Ladle into bowls, top with a spoon of ghee and a pinch of baharat. Serve hot with fresh salad and laban.
