Ingredients

Brinjal (eggplant, aubergine)1 large bharta brinjal
Onion1 large, finely chopped
Tomato2 medium, chopped
Garlic5 cloves, chopped
Ginger2.5 cm, grated
Green chilli2, chopped
Cooking oil (vegetable oil)2 tbsp
Cumin seeds1 tsp
Turmeric (ground turmeric)¼ tsp
Red chilli powder (indian red chili powder)1 tsp
Coriander powder (ground coriander)1½ tsp
Garam masala½ tsp
Coriander leaves (cilantro)a big handful

Method

5 steps
  1. 1Rub the brinjal with a few drops of oil and roast it directly on a gas flame, turning every few minutes.
  2. 2Let it cool a little, peel off the charred skin and mash the flesh with a fork.
  3. 3Heat the oil, add cumin, then onion, garlic, ginger and green chilli. Cook until soft and pale gold.
  4. 4Add the tomato, turmeric, chilli and coriander powder. Cook until the tomato breaks down.
  5. 5Add the mashed brinjal and salt. Cook, stirring, then finish with garam masala and coriander.
Serve it like this

Serve hot on a plate, with a few fresh coriander leaves on top.
