Ingredients

4 servings
Lettuce1 small head, torn
Cucumber1, cubed
Tomato2, cubed
Radish (daikon radish, mooli)4 small, sliced
Spring onion (green onion, scallion)3, sliced
Capsicum (green capsicum, green bell pepper)½, diced
Flat leaf parsley½ cup leaves
Mint leaves¼ cup
Pita bread2 pitas, cut into squares
Olive oil3 tbsp
Lemon juice2 tbsp
Sumac2 tsp
Pomegranate molasses2 tsp
Garlic1 small clove, crushed
Saltto taste

Method

4 steps
  1. 1Brush pita squares with a little of the oil and toast in a hot oven or pan until crisp.
  2. 2Whisk the remaining oil with lemon, pomegranate molasses, garlic, half the sumac and salt.
  3. 3Toss all the vegetables and herbs together in a big bowl.
  4. 4Dress, add the pita, toss once and finish with the rest of the sumac.
Serve it like this

Pile high in a wide bowl, pita on top, a last dusting of sumac. Serve right away, cool and crunchy.
