Ingredients

3 servings
Rice noodles400 g fresh lort noodles, or 200 g dried thick rice noodles
Soy sauce1½ tbsp
Dark soy sauce2 tsp
Oyster sauce1½ tbsp
Fish sauce1 tbsp
Sugar2 tsp
Cooking oil (vegetable oil)2 tbsp
Garlic5 cloves
Beefthin slices
Moong sprouts (mung bean sprouts)bean sprouts
Spring onion (green onion, scallion)Chinese chives, cut
Cabbageshredded
Egg3
Red chilli saucesweet chilli sauce, to serve

Method

5 steps
  1. 1Soak or loosen the noodles and mix the soy sauces, oyster sauce, fish sauce and sugar.
  2. 2Stir fry the garlic and beef in most of the oil over high heat for 2 minutes.
  3. 3Add the noodles and sauce and toss 3 minutes until coated and lightly charred.
  4. 4Add the sprouts, chives and cabbage and toss 1 minute.
  5. 5Fry the eggs sunny side up in the rest of the oil and put one on each plate.
Serve it like this

Serve on a plate with the fried egg on top, sweet chilli sauce and fish sauce with chilli on the side.
