Ingredients

4 servings
Glutinous rice (sweet rice)1½ cups, soaked
Chicken, boneless250 g thigh, diced
Chinese sausage2 links, sliced
Dried shiitake mushrooms4, soaked and diced
Oyster sauce2 tbsp
Soy sauce1½ tbsp
Dark soy sauce2 tsp
Sesame oil1 tsp
Sugar1 tsp
Ginger1 thumb, minced
Shallots3, sliced
Cooking oil (vegetable oil)1 tbsp
Waterfor the rice

Method

5 steps
  1. 1Soak the rice overnight. Marinate the chicken with half the sauces, ginger and sesame oil for 30 minutes.
  2. 2Steam the rice 25 minutes, then toss with the remaining sauces and a little water.
  3. 3Stir fry shallots, chicken, sausage and mushrooms until cooked through.
  4. 4Soak lotus leaves or use banana leaf. Layer rice, filling, rice and fold into parcels.
  5. 5Steam the parcels 30 minutes.
Serve it like this

Serve each parcel on a small plate, opened at the table to release the steam. Jasmine tea alongside.
