Ingredients

Radish (daikon radish, mooli)1 kg white radish, grated
Rice flour2 cups
Cornflour (cornstarch)¼ cup
Chinese sausage2, diced
Dried shrimp3 tbsp, soaked and chopped
Dried shiitake mushrooms5, soaked and diced
Cooking oil (vegetable oil)3 tbsp, plus for frying
Salt1½ tsp
Sugar2 tsp
White pepper½ tsp
Water1 cup, mushroom soaking water
Spring onion (green onion, scallion)2, chopped
Oyster sauce2 tbsp, to serve

Method

5 steps
  1. 1Fry the sausage, shrimp and mushrooms in oil until fragrant. Set aside.
  2. 2Cook the grated radish with its juice for 10 minutes until translucent.
  3. 3Whisk rice flour, cornflour, salt, sugar, pepper and water, then stir in the hot radish and half the fried toppings.
  4. 4Pour into an oiled tin, top with the rest and steam 50 minutes.
  5. 5Cool completely, slice and pan fry until golden on both sides. Serve with oyster sauce and spring onion.
Serve it like this

Lay the golden slices on a plate, spring onion on top and oyster sauce or chilli sauce on the side, with hot tea.
