Ingredients

4 servings
Pork400 g loin, in thick slices
Salt½ tsp
Tapioca starch½ cup
Cooking oil (vegetable oil)absorbed from frying
Tomato ketchup (ketchup)3 tbsp
Sugar2 tbsp
Vinegar2 tbsp
Soy sauce2 tsp
Water⅓ cup
Garlic3 cloves
Potato1 small, diced, or water chestnuts
Spring onion (green onion, scallion)2, sliced

Method

4 steps
  1. 1Score the pork slices in a crosshatch, cut into 3 cm pieces and season with salt.
  2. 2Coat with starch, pressing into the cuts. Fry the potato cubes, then the pork until golden and curled.
  3. 3Fry garlic, add ketchup, sugar, vinegar, soy and water and bubble until glossy.
  4. 4Toss the pork and potato in the sauce and finish with spring onion.
Serve it like this
