Ingredients

4 servings
Sesame seeds⅓ cup black sesame, toasted and ground
Sugar2½ tbsp
Butter1½ tbsp, soft
Glutinous rice flour (sweet rice flour)1¼ cups
Water130 ml for dough, 600 ml for syrup
Gingera thumb, sliced
Jaggery⅓ cup, or brown slab sugar

Method

5 steps
  1. 1Mix ground sesame, sugar and butter into a paste. Chill until firm and roll into 16 small balls.
  2. 2Mix the flour with 130 ml warm water a little at a time and knead into a soft dough.
  3. 3Wrap each sesame ball in a piece of dough, sealing well, and roll smooth.
  4. 4Simmer the ginger and jaggery in 600 ml water for 10 minutes.
  5. 5Boil the balls in a separate pot of water until they float, then 2 minutes more. Lift into bowls and ladle over the syrup.
Serve it like this

Serve four balls per bowl in warm ginger syrup with a few ginger slices. Eat with a spoon, and bite gently: the centre is hot.
