Ingredients

8 servings
Pork1.5 kg shoulder
Garlic1 head, crushed
Orange juice¾ cup
Lemon juice¼ cup lime
Cumin powder (ground cumin)1 tsp
Dried oregano1 tbsp
Onion2, sliced
Cooking oil (vegetable oil)2 tbsp
Bay leaf (indian bay leaf)2
Saltto taste

Method

5 steps
  1. 1Crush garlic with salt, cumin and oregano, then mix with orange, lime and oil.
  2. 2Make deep cuts in the pork, rub with mojo and marinate overnight with onion and bay.
  3. 3Roast covered at 160°C for 3 1/2 hours.
  4. 4Uncover, raise to 220°C for 20 minutes to crisp the top.
  5. 5Rest 15 minutes and pull apart, pouring over the pan juices.
Serve it like this

Pile pulled pork on a platter with onions and juices, and serve with moros y cristianos, yuca con mojo and plantains.
