Ingredients

6 servings
Whole green moong (mung beans)⅓ cup
Rajma, dry (dried red kidney beans)⅓ cup
Chickpeas, dry⅓ cup
Lobia, dry (dried black eyed peas)⅓ cup
Whole urad (whole black gram)¼ cup
Kala chana, dry (black chickpeas)¼ cup
Green peas⅓ cup dried peas or fresh
Ghee1½ tbsp
Ajwain (carom seeds)1 tsp
Cumin seeds½ tsp
Timur (sichuan peppercorns)a pinch
Turmeric (ground turmeric)½ tsp
Onion1, chopped
Garlic3 cloves
Ginger2.5 cm
Tomato1, chopped
Water6 cups
Saltto taste

Method

4 steps
  1. 1Soak the beans overnight, then drain and sprout in a cloth for a day or two.
  2. 2Heat ghee, fry ajwain, cumin and timur, then onion, garlic and ginger.
  3. 3Add turmeric, tomato and the sprouts and fry 5 minutes.
  4. 4Add water and pressure cook until all beans are soft.
Serve it like this

Ladle into bowls with a squeeze of lemon and chopped coriander; serve with rice or sel roti.
