Ingredients

4 servings
Oxtail1 kg oxtail pieces
Water12 cups
Radish (daikon radish, mooli)a large chunk
Onion1, halved
Garlic10 cloves
Gingera thumb, sliced
Spring onion (green onion, scallion)4 stalks, chopped
Salt1½ tsp, to serve
Black pepperto serve

Method

5 steps
  1. 1Soak the oxtail in cold water for 2 hours, changing it twice.
  2. 2Blanch 10 minutes, drain and rinse each piece.
  3. 3Simmer with fresh water, radish, onion, garlic and ginger for 3 1/2 hours, topping up water.
  4. 4Chill if you can and lift off the set fat; slice the radish and reheat with the oxtail.
  5. 5Serve with spring onion, salt and pepper at the table.
Serve it like this
